Parnas Hotel Jeju — Jungmun
The Parnas Hotel sits on Jeju's south coast in Jungmun, a five-star property with an infinity pool overlooking the sea, a proper spa, and Jungmun Beach just five minutes away on foot. Jungmun itself is a good base — it's central enough to reach both the west/south loop and the east side of the island within a reasonable drive, and it has restaurants (including excellent black pork) right nearby.
Given that our trip was badly affected by rain (see our full Is Jeju Worth Visiting review), the quality of the hotel mattered more than it otherwise would have — the infinity pool and spa gave us something to fall back on when outdoor plans fell through, and we don't regret choosing a proper 5-star stay here at all.
Why Jungmun Works as a Base
Jeju is an island you explore by car, and Jungmun's south-coast position puts you within a reasonable drive of most of the major sights on both the western/southern loop (Hallim Park, Jusangjeollidae cliffs, Jeongbang Waterfall) and, with more driving time, the eastern loop (Seongsan Ilchulbong, the beaches at Hamdeok and Woljeong).
